We got exciting news that one of the first picking has happened this last week! Coffee is harvested 3 to 4 various times ensuring that the coffee is ready to be picked and at its peak level to be enjoyed. Not all of the cherries will ripen at the same time, we want to make sure that it has achieved its maximum sweetness and flavor.
Below are a few pictures of the cherries being picked and prepped to be depulped. This means that the beans (or seeds) inside are taken out of the cherry and will go through a few different processes in order to be bagged and shipped. This is all exciting news because it means that our shade grown, direct trade, pesticide free coffee will be bagged and delivered to us here in Fresno be February or March of 2016.
