This is our second year sourcing washed coffee from Doi Wiang. Though coffee has been growing in this village for over 30 years, last year our partners in Thailand spent considerable time with the farmers to improve harvesting and focus on cherry ripeness while picking. Doi Wiang boasts the highest elevation out of any village we source from in Thailand. These two factors result in a higher density and sugar content. Our Doi Wiang is roasted hot and fast in order to accommodate the higher moisture content of the bean. By roasting the coffee more quickly, we're able to preserve the coffee's natural acids and sugars. The result of all of this is a bright, complex cup with subtle fruity sweetness and a gentle, tea-like body.
