This month’s Roaster’s Choice selection takes us south to the lush mountains of Bella Vista, Chiapas, where family, tradition, and craftsmanship come together in every cup. The Mexico Chiapas Mayan Harvest represents more than great coffee—it tells a story of resilience, care, and the power of community.
🌿 Rooted in Family and Tradition
This exceptional coffee comes from the Roblero Cifuentes family—Eugenio, Froilan, Otoniel, and Omar—uncles and cousins of Rosalba Cifuentes Tovia, a name well-known among coffee producers in southern Mexico.
Each family member cultivates their own small plot of land, averaging around five acres, at elevations reaching 1,584 meters above sea level. Here, in the mineral-rich clay soils of Chiapas, they grow Bourbon, Caturra, and Catimor varieties under shade trees that protect the coffee cherries from the intense mountain sun.
After harvest, the coffee is fully washed and sun-dried, a process that preserves the clarity and complexity of flavor that defines this region’s best coffees.
🤝 Rosalba’s Commitment to Her Community
While the Roblero Cifuentes family handles the growing and processing, Rosalba works tirelessly to make sure their efforts are rewarded. Having grown up in Bella Vista, she has seen firsthand the challenges smallholder farmers face when selling their coffee through traditional channels.
To create a better path forward, she established Mayan Harvest Coffee, a direct-trade initiative ensuring producers receive fair, sustainable prices for their harvests. Rosalba personally oversees the export process—from quality control to shipping—maintaining full traceability from farm to roaster.
“Her attention to the smallest details, like sampling without puncturing burlap bags, saves producers money and preserves their hard work—ensuring quality is never compromised.”
Through her leadership, farmers are empowered to reinvest in their land, improve agricultural practices, and build a stronger future for their families.
☕ Flavor That Reflects the Land
In the cup, the Mexico Chiapas Mayan Harvest is a coffee of balance and beauty. The first sip opens with bright notes of plum and lime, followed by the deep sweetness of molasses and a touch of floral complexity. As it cools, the cup reveals a lingering dark chocolate finish—rich, grounded, and deeply satisfying.
It’s a coffee that captures both the terroir of Chiapas and the care of the people who bring it to life—bright yet grounded, delicate yet enduring.
❤️ More Than Just a Cup
When you brew this month’s Roaster’s Choice, you’re not just tasting coffee—you’re tasting a story of connection across borders, of farmers who pour their hearts into their craft, and of a woman who believed her community deserved better.
Every cup of Mexico Chiapas Mayan Harvest is a small act of support for the families of Bella Vista and a reminder that coffee, at its best, connects us all.
