Green Coffee Beans | Thai Washed Process
Huay Mae Liem Washed — Green Coffee
Clean, balanced, and vibrant — a shade-grown coffee from a small Lahu/Yao farming community in Northern Thailand.
Available in 5 lb and 10 lb bags for home roasters
Our washed-process Huay Mae Liem lot comes from a small farming community in Chiang Rai, Northern Thailand. Located at approximately 1,200 meters, the village is home to Lahu/Yao families who have cultivated coffee for more than 25 years among the surrounding mountain forests.
Coffee in Huay Mae Liem thrives beneath a natural forest canopy, where shade trees help regulate the growing environment and fallen vegetation enriches the soil with organic matter. The result is a naturally balanced ecosystem that supports healthy coffee plants without the need for irrigation or herbicides.
Field Notes: Huay Mae Liem is made up of a small group of dedicated farming families who have partnered with ITDF for approximately 20 years. Coffee is pulped, washed, and dried within the village before being further dry processed and graded for export.
When roasted lightly, this coffee showcases the clarity and sweetness of Northern Thai specialty coffee. Expect a smooth body with balanced acidity and a clean profile that highlights the influence of its forest-grown environment.
Origin: Huay Mae Liem, Chiang Rai Province, Thailand | Altitude: 1,200 masl | Process: Washed | Producers: Lahu/Yao smallholder families | Varietal: Catimor | Harvest: December – March
Roaster’s Tip: A gentle roast approach helps preserve the coffee’s clean structure and subtle sweetness. Allow enough development to build body while maintaining the clarity and balance that define this Northern Thailand washed coffee.
