Our washed-process Doi Inthanon lot comes from a cluster of small, remote villages in Northern Thailand, perched above 1,600 meters. Cool mountain air and slow cherry maturation develop dense, high-quality seeds with a remarkably clean cup profile. One of these villages, Akad Noi, is home to farmers like Manit, Attisak, and So. Until recently, processing here was incredibly basic—some families even used a mortar & pestle to pulp cherries by hand. Since 2018, our co-op partners have helped build out village-level infrastructure, combining production across multiple micro-parcels to create export-ready washed lots without losing the character of place.
Field Notes: Farms in Doi Inthanon are tiny (often ~1–2 acres) and family-run. With better training in pruning and nutrition—and even new projects like small-scale beekeeping for improved fruit set—yields and cup quality continue to rise while the region retains its delicate, floral sweetness.
When roasted lightly, this coffee shines with pastry sweetness, floral aromatics, tea-like body, and mild acidity. Medium roasts balance fruit and chocolate with a rounded mouthfeel, while darker roasts bring out a chocolatey richness and creamy body.

Roaster’s Tip: Charge a little cooler than your typical Central American washed lot and allow a steady, progressive roast. Shorten development for florals and pastry sweetness; extend gently for chocolate and body.
